Smokehouse BBQ Dry Rub Smoked Chicken Quesadillas

You will need:
  • (1) Farm Rich Smokehouse BBQ Dry Rub Smoked Chicken (16 oz)
  • 10 Whole Wheat Tortillas
  • 1 1/4 Cups Fiesta Blend Shredded Cheese
  • Taco Seasoning
  • (1/2) Onion, diced
  • Vegetable Oil (for frying)
  • Salsa (for dipping)

Instructions:

Saute diced onions in about 1 tablespoon of butter or vegetable oil.

Follow microwave instructions on the Farm Rich Smokehouse Dry Rub Smoked Chicken.

Add taco seasoning directly to the container the chicken is in, along with 1/4 cup of water. Stir. Place back into the microwave for about 1 minute, or until the taco seasoning thickens. Mix well.

Spread about about 1/4 cup of chicken onto each of five tortillas. Sprinkle each tortilla with 1/4 cup of cheese. Add a small amount of diced onions to the tortilla.

Gently press an extra tortilla on top of the tortillas with cheese, onions, and chicken to form quesadillas.

Pour about 1/2 inch of vegetable oil into a deep pan. Heat over medium-heat to about 375 degrees Fahrenheit.

Very, very carefully, add the quesadillas (one at a time) to the oil, frying each side until golden and crispy. Transfer the quesadillas to a paper towel-lined plate.

Cut each quesadilla into fourths.

Serve with salsa for dipping, and sides of lettuce, refried beans, and Spanish rice.
