Ingredients:
- 1 1/4 lb chicken tenderloins
- 1/4 cup mini sweet peppers, chopped
- 2 green onions, chopped
- 1/4 cup baby spinach
- 1/4 cup bread crumbs
- 1/4 cup feta cheese, crumbled
- 1/2 tsp minced garlic
- 1/3 cup hot sauce
- 1 large egg
- Extra hot sauce, for drizzling
Preheat your oven to 400 degrees
Chop your chicken into small pieces and grind it up in a food processor. Alternatively, you may purchase ground chicken.
Put your chopped peppers, chopped green onions, and spinach into a food processor and chop them up until they're very small pieces.
They should look something like this.
Put your chicken, chopped veggies, bread crumbs, cheese, garlic, and hot sauce into a bowl.
Mix them up a bit and then add your egg.
Use your hands (after you wash them, of course) to mush the mixture together.
Line a cookie sheet with foil and spray with non-stick spray.
Roll chicken into 1 1/4 inch balls and place onto the cookie sheet.
Bake for about 17 minutes.
Admire the deliciousness.
And then drizzle with hot sauce.
Serve with pasta, or as is.
