Roasted Potatoes Tossed in Bacon Grease


This super simple roasted potato recipe uses only Yukon Gold potatoes and four other ingredients: salt, pepper, olive oil, and bacon grease. You can use these roasted potatoes as a side or experiment with other ingredients to make it a main dish.

Roasted potatoes are one of my favorite side dishes. Sometimes I tweak recipes a little to turn them into main dishes, by adding meat such as kielbasa, browned breakfast sausage, and even bacon with Parmesan cheese. There's really no limit to what you can do with roasted potatoes.

What makes these roasted potatoes so delicious is that they're tossed in bacon grease. This makes them more flavorful, without much effort.

I keep a small cup of bacon grease in my freezer to add a little flavor to my dishes. It melts quickly, so there's no need to soften it up before using. If you don't have bacon grease lying around like I do, feel free to fry up some bacon and reserve the grease. You can then chop up the bacon and sprinkle it on top of the potatoes once they come out of the oven.

To start, preheat the oven to 500 degrees Fahrenheit (260 degrees Celsius). You can use any kind of potatoes that you'd like, but I find that Yukon Golds are best for roasting. I wash and dice four Yukon Gold potatoes. I leave the skin on, but you don't have to. 

Next, I transfer the diced potatoes to a medium mixing bowl. I toss the potatoes in a Tablespoon of olive oil, a teaspoon of salt and a teaspoon of pepper.


After that, I spread the potatoes onto a lightly greased, foil-lined cookie sheet.


I then place the pan in the oven and bake at 500 degrees for about twenty minutes. As soon as the cook time is up (or the potatoes are nicely browned and a fork can be inserted easily), I remove the potatoes from the oven and immediately toss in one and a half teaspoons of bacon grease. I will also add another 1/2 teaspoon of salt, if I feel it needs it.

The potatoes are best served hot.


You can play around with this recipe by adding Parmesan cheese, chives, kielbasa, or whatever your heart desires. It's a super simple recipe with a lot of flavor.
